The Story Behind the Product
Commercial pulses are routinely polished with oil and washed with chemical agents to improve appearance and speed up cooking time. Polishing removes the outer bran layer — which contains a significant proportion of the protein, fibre, and micronutrient content. NAMO's dals are cleaned mechanically without any chemical treatments. They may take slightly longer to cook than their polished counterparts — and every minute of that extra cooking time is accounted for by the nutritional difference.
